Borrowed from the wine industry, carbonic maceration is an anaerobic (without oxygen) processing method where whole, intact coffee cherries are sealed in an airtight tank filled with CO2, helping to break down the fruit's pectin. This results in intense, complex flavor profiles with notes of cooked fruit and wine. Double fermentation (or "double washing") is a water-based process where coffee is fermented and washed multiple times. After depulping the cherries, they are placed in water for fermentation, then washed. This initial process is repeated, with another fermentation and washing stage before drying. By removing more mucilage, this fermentation process typically produces clean, bright, and crisp coffee with strong fruity notes.
