Farm to Shore: “The Story Behind the Cup”
Farmed by our friends at De La Finca, this is one of the most exceptional and prized crops grown by Nelson and his team in the Comayagua region of Honduras. Known as La Esmeralda, this experimental farm of De La Finca is continuously pushing the boundaries of specialty coffee processing in the area. Recently acquired in 2021, this farm in the under-appreciated area of La Sampedrama boasts high altitude, volcanic soil, and a vibrant culture. 

We love the intentionality behind this particular lot. First, De La Finca chose cherries from both their caturra and typica harvests specifically for honey processing to achieve a delicate balance of flavors between fruit-forward naturals and the crisp smoothness of a fully washed cup.

Then, the lot of cherries is meticulously processed to perfection. Careful depulping, followed by a 19-hour anaerobic fermentation in grainpro bags, and then sun-dried on lined patios to help for a slow and controlled drying time. The result is a remarkably succulent and unique flavor that can only be achieved with the finest cherries and extended fermentation. Indulge in a harmonious cup of coffee with a velvety texture, highlighted by notes of juicy apple, raw sugar, and caramel.
